Our cheese is made with all natural milk from a Mennonite dairy farm where the cows are pasture grazed and never given any antibiotics or hormones. Instead they are fed a vitamin enriched diet and all the grass they can eat. The milk is not homogenized and is low-temperature pasteurized at just 145 degrees, then quickly cooled to preserve the natural flavor and enzymes that Mother Nature intended. We think the milk tastes better because the cows are happy.
You won’t see hydraulic presses and fancy modern equipment in our micro-creamery. Instead, we make our cheeses by hand using traditional European techniques to protect the delicate curds. This is a lot more work and very time consuming, but we believe it creates better cheeses with rich complex flavors. In fact, we have to brag just a little. Our Tuscan Sun (an Asiago with sun-dried tomatoes and basil) was featured in Better Hones and Gardens last October. And our Mama Mia scored a 98.6 at the World Cheese Championships in March.
We always have over a dozen different cheeses available at the Market. Stop by and sample our Butterkase (Amish Butter Cheese), Mama Mia, Sassy Redhead, Tuscan Sun, Abbey Road and of course our bourbon infused Kentucky Derby. Oh, and don’t miss our Smokey Mountain, the only smoked Gruyere in the country.
